InterContinental Dublin has launched Simmons, a new contemporary Irish restaurant in the heart of Ballsbridge, opening for dinner from September 1st.
Overlooking the Garden Terrace at the five-star InterContinental Dublin, Simmons is rooted in seasonality, provenance and a genuine sense of place, with a focus on contemporary Irish cuisine, warm hospitality and a relaxed, sociable dining experience.
Named after one of Ballsbridge’s most influential families, Simmons has undergone a complete redesign over the past six months. Created by Millimetre Design, the new interior takes inspiration from the glamour of classic European grand cafés. At its centre is a striking bar clad in veined Calacatta Viola stone, complemented by leather banquettes, Versailles oak parquet, Italian mosaic floors, stained-glass ceiling lightboxes, chandeliers and original artwork.
At the helm of the kitchen is Head Chef Abhimanyu Behl, who has previously worked at The Merrion, The Conrad and Carton House. Working alongside InterContinental Dublin Executive Chef Alberto Rossi and his team, Behl has created menus celebrating Irish produce and the changing seasons, complemented by global influences and modern techniques.
The dinner menu showcases ingredients from Irish producers, with dishes including Carlingford Oysters, Connemara Scallops and Ballymakenny Potato & Garlic Soup with Guinness Bread. Dry-aged beef and lamb are sourced from McLoughlin Butchers in Dublin, while Kingsbury Farms Wagyu features on the menu alongside seafood dishes including Dover Sole, Atlantic Halibut and Stone Bass.
Desserts are curated by Executive Pastry Chef Orna Larkin, while Simmons also offers an extensive wine collection and a new cocktail menu featuring Martinis, Champagne cocktails and wines by the glass.
Leading the front-of-house team is Restaurant Manager and maître d’ Nick Munier, a familiar name in Irish hospitality through his career spanning 25 years, including Pichet and appearances on Irish MasterChef and The Restaurant.
Alongside the main restaurant and bar, Simmons offers a private dining room for bespoke celebrations, corporate dinners and intimate gatherings.
Simmons is open for dinner Tuesday to Saturday from 5.30pm to 10pm.
